Fermentation: 12 months in 30% new and 70% used French & American oak.

 

Visual: Deep cherry red with hints of brick orange in the rim. Clean, clear and brilliant, with high density,

Nose: Plums and currants, with a spiced expression with pepper and clove. Oak rounds the aroma giving an elegant finish. 

Taste: Full body, dry, long permanence, marked tannins, slight bitterness. Confirms the fruit expression and pepper hints, slight green bell pepper hint.

 

Pairing: Intense dishes such as meat, spiced or smoked dishes. Duck lasagna, cured ham, prosciutto and intense cheeses.
