Palate: Dry, lively acidity, light bitterness and absent of salinity. Light alcoholic sensation, adequate astringency, full body. Frank aftertaste combined with fresh plum, good aftertaste. Balanced.
Primary Fermentation : for 11 days in stainless steel tanks at temperatures between 17 and 24 degrees Celsius, to preserve primary aromas. Inoculation with F15 Zymaflore yeast and the use of organic nutrients during fermentation.
