Varieties: 35% Cabernet Sauvignon, 65% Tempranillo
Appellation: Ejido El Porvenir, Valle de Guadalupe, Ensenada B.C. México.
Technical information: After several percentage tasting trials in the lab, we decided that 50/50 was the best match of these two varietals for this specific vintage. Both varietals got picked around 24-24.5 brix, macerated similarly thru 72 hrs. and fermented afterwards. ML fermentation was completed in each tank and then aged separately in new and neutral oak thru 24 months.
Tasting notes: bold nose of Blackberries, blackcurrant and spicies. Well balanced wine with a velvety finish, complex and good acidity.
Food pairing: roasted pork loin, mushroom risotto, arrachera steak, and slow-roasted duck.
